Cream Of Onion Soup

1 pound of bacon

 

¼ stick of butter

 

8 cups of chicken broth

 

2 tablespoons of mince garlic

 

1 to 2 large onions chopped

 

½ pint of cream

 

1 bunch of green onions chopped

 

    In a stock pot place butter in and bacon, fry bacon until done. After bacon is done remove and let cool. sauté garlic for a bit, then add onion and sauté until translucent. Now add your chicken broth. Bring pot to boil for 5 to 10 min. then simmer. Chopped bacon into small pieces for garnish. Taste soup and season to taste with salt, pepper and maybe celery salt. Pour in some of the cream (not all at one time you should do this to taste) and let simmer another 5 min. To serve put in to wide bowl and put bacon and some green onions on top for garnish.
