Enhanced Chicken Tacos

   This recipe takes advantage of pre-packaged ingredients, which makes it a little more convenient.

 

        1 large taco kit (available in grocery stores, containing seasoning and shells)

        Boned, skinned and diced chicken meat, about 1 to 1 1/2 pound per taco kit

        3/4 cup orange juice

        2 tbsp oil

        Shredded lettuce

        Grated cheese

        Chopped onion

        Sour cream

        Salsa

 

 

   Add chicken to hot oil in a large skillet or pan along with some of the chopped onion and stir briskly until browned slightly. Add taco seasoning packet and orange juice. Reduce heat and cover, cooking slowly until meat is done and juice is thickened. Orange juice will burn easily, so pay close attention during the cooking. Heat shells, fill with meat and garnish with shredded lettuce, tomatoes, cheese, onion, salsa and sour cream.

 

    Feeds about 2 hungry kids or 4 adults
