Lower fat than deep fried, and you can add a bunch of flavor.

5-6 medium to large potatoes, washed and quartered

salt, black pepper, white pepper, garlic powder, onion powder, dill, chives, basil, parsley flakes, red pepper flakes, chili powder, cumin, etc.

   oil

   flour

In a large zipper bag place any and all spices you like with enough oil to coat potatoes, mixing well. Add salted potatoes and shake, coating well. Put potatoes in another zipper bag with flour in it. Shake to coat potatoes. Arrange on a cookie sheet or other shallow pan in a single layer and cook in a pre-heated 375 degree oven until tender and browned, turning once.

   Enjoy!
