New Orleans Pralines

 

 

1 ¼ cups sugar

 

¾ cups brown sugar

 

½ cup evaporated milk

 

½ stick butter, frozen

 

1 tablespoon vanilla

 

1 ½ cups pecans

 

Put sugar and milk in heavy bottom pan and cook to soft- ball stage. Take off heat and add frozen butter, vanilla and pecans. Stir until shine leaves mixture. Spoon onto waxed paper.
